Perfect Vanilla Cupcakes
If you’ve ever wondered why vanilla cupcakes don’t get the love they deserve, it’s because most homemade versions fall flat. This recipe brings vanilla cupcakes to new heights: soft, fluffy, and packed with a rich vanilla flavor that beats anything from a box or bakery.
Ingredients:
1 1/2 cups all-purpose flour
1/2 cup cornstarch
1 cup sugar
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 cup unsalted butter, softened
2 large eggs, at room temperature
1 tbsp pure vanilla extract (preferably Madagascar vanilla)
1/2 cup whole milk, at room temperature
Instructions:
Preheat your oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners.
In a medium bowl, whisk together the flour, cornstarch, sugar, baking powder, baking soda, and salt. Set aside.
In a large bowl, beat the softened butter until creamy. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
Alternate between adding the dry ingredients and milk to the wet mixture, beginning and ending with the dry ingredients. Mix until just combined; be careful not to overmix.
Divide the batter evenly between the cupcake liners, filling them about two-thirds full. Bake for 18–20 minutes, or until a toothpick inserted comes out clean.
Let the cupcakes cool in the tin for 5 minutes before transferring to a wire rack to cool completely.
